Taco Soup | A Fall Recipe
With the cooler months rapidly approaching, and Fall on the near horizon, I wanted to kick start the season by telling you one of my absolute favorite Fall recipe for those cooler days.
Growing up when I still lived at home, we had a rotation of sorts when it came to dinner. I always especially looked forward to taco soup night, because it’s absolutely delicious. Plus, there’s just something about soup to me that’s not only warming to the body, but relaxing as well, especially in the cooler months, which makes this the perfect Fall recipe.
Think about when you were a kid and you’d go outside to play on a blistery Fall day or go build a snowman in the Winter. What’s the first thing you hope to have when you go back inside? For me, it was hot chocolate and hot homemade soup.
The best thing about taco soup for me though, is the fact that a girl like myself who has non-celiac gluten sensitivity can still relish in the greatness that is Taco Tuesday without writhing in pain from gluten filled soft tacos. Although now I have found gluten free soft tacos, but either way, soup takes the cake! Plus, taco soup is really warm and satisfying, which makes it all the better for your Fall recipe collection!
When I would go outside to play growing up when it was colder, I always really looked forward to my mom’s taco soup. Sometime’s we’d have homemade tomato soup too, but taco soup is by far my favorite. We would come inside and take off all our wet, snowy clothes, or coats and gloves and throw them in the wash. Then after we’d changed into warmer, dry clothes, we’d gather in the kitchen or living room to get some taco soup and spend time together. This soup tradition as one of our Fall recipe staples, brings back lots of fond memories.
Usually our version of spending time together was watching some of our favorite shows together. Namely, Walker Texas Ranger because it was my dad’s favorite, and who doesn’t love Chuck Norris!? Anyway, we’d sit there together in the living room with our soup and watch tv together as a family. I really cherish those memories, because it meant a lot to me having this tradition with my family. Now as a grown adult, I fondly look back at those times with joy and am so thankful for them.
So I encourage you this cooler season, to hold tight to the ones you love, and make a point to spend time with your family. No matter what that looks like. Maybe this recipe will help you do just that! So put on some soup, grab your family members, and gather and enjoy each other’s company this Fall season.

- 1 rotisserie chicken or 4 chicken breasts
- 1 can corn
- 1 can kidney beans
- 1 can chili beans
- 1 lg can diced tomatoes
- 1 small carton sour cream (omit if dairy free or use alternative)
- 8 oz shredded cheese (omit if dairy free or use alternative)
- 1 dry pack ranch dressing (website listed below for dairy free alternative)

directions
- If using chicken breasts, boil the chicken first. When done, shred the chicken and put in soup pot.
- Add your corn, kidney beans, chili beans, tomatoes, sour cream, cheese and ranch dressing to pot and stir.
- Cook on med-high for about 30 minutes stirring occasionally.
- Once done, serve and enjoy!
